Hi Rob... Actually, the atmosphere had good mid-level shear, inflow tower was strong and impressive, but upper level winds were basically non-existant...so no anvil ever came to fruition... No; to both questions. For (years) I make it pretty much a habit to "lie" to the camera meter. I.E., if it's C41 film, and 400 ISO, I shoot it at 200 ISO. Makes for great saturation. Obviously, with slide film, the opposite is true. Makes for better out of the camera images, less fooling with PS, or any other S/W.

It looks like it's starting to form the classic "anvil" shape ( which usually means trouble ). Did you use a polarizer or under expose the sky Bill ?
