Photoshop amazes me every day - I wish I was writing software like that, rather than banking programs.
The most interesting way I found to learn was to buy magazines with CD's on the front - these often have several Photoshop lessons on them, and by watching them you learn about not only the lesson, but often many techniques and shortcuts that professionals use.
I learned about the reflections from Digital Camera Magazine. The magazine itself is so-so, but the lessons are often excellent.
To be honest, I usually just adjust levels, correct the horizon and crop like everyone else.
