That is much more like the colour I was trying to achieve, I'll use your methods in some
of my other photos to improve them.

I have attached a fixed version of this image. Is this the color that you were going for? What I did was to adjust the levels as they were way off from where they should be. This helped to brighten the image and bring out more detail. Next I applied a curve adjustment to fine tune the the contrast. Next I converted the image to lab color and applied a unsharp mask to it to help sharpen the image. Then converted it back to RGB and save it.
