Stephen, If you are interested in saving some $$, the 20D and 30D have identical sensors, and the same image quality. I've used both, and the biggest benefit to the 30D is the larger LCD display on the back.
I have been very very happy with my 20D.

Cool! I like the DOF of it.
I wanted to tell you also, that I am now the proud owner of a new Canon 30D. I also bought a new lense to go with it. It is a Canon EFS 70-200mm f/2.8L IS with a stabilizer. Havnt used it alot yet but I am sure Im going to love it.
