Paul, I tried your suggestion with the result below... actually I reduced the saturation 45%. Personally, I think the full color shot emphasizes the contrasts: old and new, alive and inert, colorful and faded.
If anyone likes this instead, I'd love to hear why you think it works better!!!

How about a mid-point? See what it looks like when you desaturate to about 35 - 40%.

I like both, but they grayscale gives it a more rustic/oldy worldy feel to it.
